These Vegan Caramel Delite / Samoa Cookie Overnight Oats are dessert for breakfast with layers of salted caramel made with dates, Toasted coconut, melted chocolate!

The other day I was making a list of ways to make overnight oats more exciting. I was looking through my breakfast section and saw my Samoa cookie pancakes. And decided to make some oatmeal with the same concept!

These overnight oats have the oats and chia seeds mixed in to sit overnight. For the samoa cookie, I swirl in some date caramel which adds sweetness to the oat mixture. Then top the oat mixture with more caramel, some toasted coconut and a good drizzle of melted chocolate. I mean, its dessert, its breakfast, its everything you want to eat right now!

  1. Where does the name for these come from? I never heard it before so I googled it but the reason for the name I cannot find. I’m Māori, so I’m a little curious as to why ‘Samoas’ is a cookie name for something now rebranded as caramel dee lites.

    1. @April yes it isnt clear about the history on why the bakery used the name and seems like appropriation. i’ll add the alternate name to this post and use the caramel delite for any future versions.

    2. Vegan Richa Samoa is a Pacific island/s, it’s just so random to use that name, it’s strange that the history behind that isn’t available as it just seems like cultural appropriation otherwise.

    3. I don’t know where the Samoa cookies(girl scout cookies) got their name. The web doesnt give clear information either. The oatmeal is based on the cookies. I havent had any girl scout cookies in years, so i remember them being samoa cookies then. I’ll look up the rebranding.
