mini crunchy chocolate chip cookies Something Vegan

1/2 cup organic sugar
2 tbsp. canola oil (or other neutral oil)
2 Tbsp. non-dairy milk
1 tsp. vanilla extract
1 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup mini vegan chocolate chips

Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, oil, non-dairy milk, and vanilla extract. Stir well. Add flour, baking powder, and salt. Stir until a smooth dough forms. Add mini chocolate chips, and stir in. Roll half of the dough into a slender log on parchment paper. Slice into small pieces, re-shape into rounds, and place on an un-greased baking pan. Repeat with the other half of the dough. Bake 10-12 minutes. Makes about 85 tiny cookies.
