These almond cookies become a little more special when you infuse them with anise, and smush a fig on top. That’s right, fig smushed anise almond cookies from the Veganomicon are a step up from your normal cookie.

Fig Smushed Anise Almond Cookies:
1/4 cup soy milk
2 tsp ground flaxseed, or 1 1/2 tsp whole flaxseeds
1 1/4 cups demerara sugar/turbinado sugar (Sugar in the Raw)
2/3 cup canola oil
1 tsp pure vanilla extract
2 cups all purpose flour
1/2 tsp anise extract
1 tsp baking powder
1/2 tsp salt
1/2 cup finely chopped almonds (start with slivers or slices)
12 dried black mission figs, rough stem removed, cut in half lengthwise

  1. 💡Interesting fact: Sorry to be the bearer of bad news if you didn’t already know, but yep, it’s true, some figs do contain dead wasps. 😱 It’s a debated issue amongst vegans. figs are not “responsible” for the wasp’s demise but the fact remains that without the process occurring, neither the fig tree nor the fig wasp would survive. 😔

    1. I read that the ones in California aren’t pollinated, so that would hopefully mean there aren’t any dead wasps in there…. but who knows.

  2. 💡Dried figs contain almost 7-10 grams less sugar than dates per weight. Two to three dates is around 23 grams of sugar, depending on the size and variety…Medjool (more sugar) is my fav & the best & the Deglet (less sugar), while the same amount of figs is only 13 grams of sugar. They are both a “whole food” and have great nutrients. Date sugar is considered the best natural sugar.

    ☝️The sweetness of a fruit is often determined by the person, not necessarily the fruit’s sugar content because everybody’s taste buds are different. 😁

  4. 🤔I love figs & dates – ☝️I thought dates had a higher sugar content than figs…now ya got me thinking🤔…I love fun useless facts…my friends & family crack up because I can remember this stuff but I can’t remember what happened a year ago 🤪
    ….anyway, I’m gonna have to look it up since you brought it up 🤣😂🤣

  5. 👍I’ll take your word for it on this one😁…me no likey anise flavor 🤨& almonds make me itch.😩 Although I could mix things up a bit because I do have figs and it’s a good basic recipe I can use to add almost any flavor…we’ll see….🤔🤔 Thanks for sharing & demoing. 💞
