Cake Ingredients:
– 2 cups flour
– 2 tsp baking powder
– pinch of salt
– 1 tsp cinnamon
– ½ cup vegan butter
– scant 1 cup sugar
– 2 tsp vanilla
– 2 vegan egg substitutes (I used )
– 1 ¼ cup almond milk
Vanilla Frosting Ingredients:
– 2 tbsp vegan butter
– 2 cups powdered sugar
– 1 tsp vanilla
– 3 tbsp almond milk
Cinnamon Crunch Ingredients:
– ½ cup flour
– ½ cup brown sugar
– 1 tsp cinnamon
– 3 tbsp vegan butter
Instructions:
1. Whisk together the flour, baking powder, salt, and cinnamon. Set aside.
2. Cream together the vegan butter and sugar.
3. Mix in the egg substitutes and extracts.
4. Alternate adding in dry, wet, dry, wet, dry to the butter mixture.
5. Pour into 2 greased and floured 9” baking pans. Bake at 375 degrees F for 22 minutes.
6. Mix together the frosting ingredients and the cinnamon crunch (each in a separate bowl).
8. Decorate cake once it has cooled completely and enjoy!
